Banana Bread
1 ¼ c. sugar
½ c. margarine
1 c. banana pulp (2 bananas)
4 T. sour cream
2 eggs
1 c. white flour
1/2 c. whole wheat flour
1 t. soda
1 t. vanilla
½ t. salt
Cream butter and sugar together. Beat eggs and add. Dissolve soda in sour cream and add with flour and rest of batter. Grease bread pan and flour. Cook at 350 for 1 hour and 10 minutes. Check at 1 hour.

Pumpkin Chocolate Chip Bread
1 spice cake mix
1 can pumpkin (small can, or ½ large can)
1 package of milk chocolate chips
Mix all ingredients and bake at 350 for 30-35 minutes in 4 small bread loaf pans, or as cookies on cookie sheet.

Cornbread Cake
1 c. sugar
1 c. margarine
1 c. flour
1/2 c. whole wheat flour
1 c. cornmeal
2 t. baking powder
2 t. salt
2 beaten eggs
1 ½ c. milk
Cream sugar and butter. Add rest of ingredients. Put in greased 9x9 pan. Bake 350 for 30 minutes or until toothpick comes out clean.

Taco Soup
I lb. ground beef
1 16oz. can kidney beans, undrained
1 16oz. can black beans, undrained
1 16 oz. can diced tomatoes
1 8oz. can tomato sauce
1 l6 oz. whole kernel corn, undrained
1 pkg. Taco mix, seasoning<
¼ c. chopped onion
1 can diced green chilies<
Brown beef & onions. Add rest of ingredients and warm over stove.
Serve with cheese, sour cream & tortilla chips.

Delicious Garlic Cheese Biscuits
2 c. Bisquick
2/3 c. milk
1 c. cheddar cheese, shredded
½ c. butter
1/8 t. garlic powder
Mix Bisquick, milk and cheese until soft dough. Form little balls using a spoon. Bake at 450 for 8-10 minutes. Mix butter and garlic powder together and brush on top of rolls when done

Summer Chicken Chili
1 medium zucchini, chopped
1 medium white onion
1 can pinto beans, drained
1 can black beans, drained
1 can kidney beans, drained
1 can corn, drained
16 oz. thick and chunky mild salsa
3 c. cooked, shredded chicken
1/2 -2 T. chili powder
14 oz. cans chicken broth
8 oz. tomato sauce
1 garlic, pressed
1 t. ground cumin
Salt and pepper to taste
Dash of cayenne if you want some kick
Sauté onion, zucchini, garlic and chicken. Add seasonings. Add remaining ingredients and simmer for 30 minutes after coming to a boil. Top with chips, cheese, sour cream, etc.

Pumpkin Waffles
3 eggs
1 pound can of pumpkin
¾ c. vegetable oil
½ c. water/beat together then add:
2 ½ c. flour
2 ¼ c. sugar
1 ½ t. baking soda
1 ¼ t. salt
¾ t. nutmeg
¾ t. cinnamon
Beat all ingredients together and pour 1/4 cup scoopfuls into waffle maker. Serve with whipping cream & chopped pecans on top.

Buttermilk Pancakes
2 c. buttermilk
2 eggs
4 T. oil
2 T. sugar
2 t. baking powder
2 c. flour (Optional: Use whole wheat flour YUMMY)
1 t. salt
1 t. soda
Beat until smooth. Pour and wait for bubbles to pop, then turn. *For extra flavor add blueberries.

Won Ton Chicken Salad
1 romaine lettuce, shredded
2 stalks celery, diced
2 green onions stalks, sliced
4 ½ chicken breasts cooked & shredded, seasoned heavily with Montréal Steak Seasoning
½ package wonton skins
1 can mandarin oranges
1 can water chestnuts, optional
2 c. cooked white rice
Cut wontons into 1 in. by 4 in. strips. To fry wontons follow ingredients on package. To bake wontons spray cookie sheet with oil spray. Then place wontons on cookie sheet separated in rows. Bake at 350 or so just until golden brown. Don’t over due, they burn easily.

Sauce:
½ c. apple cider vinegar
¾ t. ginger
¼ c. salad dressing (or mayo)
1/8 t. cayenne or dash of Tabasco
4 T. sugar (or more)
2 t. sesame seeds
2 T. soy sauce
Serve all over warm rice.
 

Butter Syrup
Melt 1 cube of butter. Add 1 c. sugar and dissolve on low heat. When dissolved thoroughly, it should appear white in color and all combined together. Then add ¼ - ½ c. evaporated milk, until thick. Add 1 t. vanilla and serve over waffles, pancakes, French toast or fruit.
